黑麥核桃鄉村麪包


材料:

  • 低筋麪粉 200g
  • 黑麥粉 15g
  • 酵母 3.5g
  • 水 110g
  • 鹽 3g
  • 蜜糖 1小匙
  • 橄欖油 10g
  • 核桃碎 30g
  • 提子乾 20g

製法:

粉類和鹽放在一齊,酵母用酵母的3倍溫水浸泡備用(之後扣除現用的水量)材料

(除堅果和油類)放入綱盆中攪拌以慢速1分鐘後轉中速2分鐘攪打。再加入橄欖

油攪拌以慢速1分鐘後轉中速3-4分鐘攪打。完成後將核桃碎和提子乾加入攪拌

用中慢速將堅果攪拌於粉糰中。再用手指按粉糰表面如粉糰彈回來且沒有痕跡

即表示粉糰已完成。攪拌時盡量把堅果和提子包裹於粉糰內以免烤焦。將

粉糰蓋上保鮮紙發酵70-90分鐘於40分鐘左右時反一反粉糰發酵完成後

用手背拍打粉糰再將粉糰從上和下捲至中間再從兩則捲至中間一個反轉成

正面再從指打粉糰部份再做一次。完成後蓋上保鮮紙靜待20分鐘。然後把粉

糰放致於鋪有烘焙紙的烤盤上進行最後發酵45-60分鐘。烤箱以250度預熱

粉糰放入烤箱前在表面用刀界出線條再把粉糰放入235度烤箱烤12分鐘再降

至165度烤6分鐘即可。
